The setting to show the Developer tab in Office applications is found at the bottom of the View tab of each Application's preferences. I can understand your frustration with Office I can't use it right now.
It wants to be activated even though it should be fine. Excel crashes on every workbook both new and existing. Not good. I also agree that major features like customizing the Ribbon and QAT, along with VBA and the Microsoft Query SQL Editor should all have been in place before release and not go out as point releases. However, Microsoft seems to want to give the impression that renting software via Office is more valuable than purchasing outright, so as time passes we will see more features turned on for subscribers but not the pay upfront customers.
Office for Windows has a customize Ribbon and QAT GUI. Office for Mac does not, at least it doesn't right now. A GUI could be something that comes in a point update. Neither am I a fan of the Ribbon. I prefer floating toolbars that don't hog window space in my documents, workbooks and presentations.
I would highly recommend you switch to Office for your thesis. I think Office just isn't up to snuff to risk using it for something that important. As for the complexity of customizing the Ribbon and QAT using VBA and XML - that's something Microsoft sold itself on because XML is plain text and is widely used by web programmers. You see, everything is about the web and mobility these days.
